Peanut Butter Cookie Cake with Peanut Butter Frosting


Any peanut butter lover will love this easy to make Peanut Butter Cookie Cake with Peanut Butter Frosting!



This cookie cake is easy and relatively quick to make. The longest part is waiting for the cookie to cool before frosting. Not too peanut buttery, the frosting is light and fluffy which goes perfectly with the peanut butter cookie cake. 

If you'd like, top this cookie cake with chocolate frosting or add in about a cup of chocolate chips in with the batter. Chocolate and peanut butter is a classic combination that almost everyone loves!



Peanut Butter Cookie Cake with Peanut Butter Frosting

  • 1 1/2 cups all purpose flour
  • 3/4 cup creamy peanut butter
  • 3/4 cup light browned sugar
  • 1/2 cup softened refined coconut oil or unsalted butter
  • 1/4 cup white granulated sugar
  • 1 egg
  • 1 tablespoon milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine sea salt
Peanut Butter Frosting
  • 2 cups powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1/4 cup peanut butter
  • 2 to 3 tablespoons milk
Grease or line a 9" round cake pan with parchment paper. Set aside.

In the bowl of a stand mixer, cream the butter/coconut oil, sugars, and the peanut butter until combined. Add the egg, milk, and vanilla extract and beat until smooth. Add the salt, baking soda, and flour. Mix until combined. Press into prepared cake pan, then refrigerate for 30 minutes. 

Preheat the oven to 350 F.

When dough is cold, bake for 20 to 25 minutes, or until golden brown and a toothpick comes out clean with just a few moist crumbs. Allow to cool completely.

For the frosting, add the butter and peanut butter to the bowl of a stand mixer. Cream together, then slowly mix in the powdered sugar. Add milk as needed until desired consistency. 

Frost cookie cake as desired. Slice and enjoy!
