Refreshing and full of flavor, this Minted Honey Ginger Lemonade is delicious hot or cold!
*I love a strong ginger flavor in this lemonade so I use a lot of it. About 3 to 4 inches or so of root, that I slice (the coins usually measure to about 1/4 cup). Use as much or as little ginger as you like! Also, the longer you steep the ginger and mint in the honey simple syrup, the stronger the flavor!
- 1/2 to 3/4 cup honey
- 1 to 1 1/4 cups lemon juice
- 5 to 6 cups cold water, divided
- 1/2 cup fresh mint leaves, lightly packed
- about 1/4 cup fresh ginger coins, peeled*
Add the mint leaves and ginger to a heat proof glass jar or bowl. Bruise/mash with a spoon to release the oils. Set aside.
Add the honey and 2 cups of water to a saucepan. Bring to a simmer and stir until the honey is dissolved in to the water.
Pour the honey simple syrup over the ginger and mint in the bowl/jar. Cover and refrigerate until chilled and flavors are developed. (I prefer overnight)
