All you need are three ingredients to make these delicious, low fat pumpkin chocolate chip cookies. They're perfect for last minutes gifts or unexpected company this Christmas!

Pumpkin chocolate chip cookies are one of our favorites. They taste like little pumpkin pies with chocolate. This recipe is extremely easy, (only three ingredients) making these a perfect cookie to make with young kiddos who are just learning how to bake.

Three Ingredient Pumpkin Chocolate Chip Cookies
makes 30-36 cookies
  • 1 box spice cake mix
  • 15 oz can organic pure pumpkin puree
  • 1 cup chocolate chips
  • 1/2 cup mini holiday chocolate candies (optional)
Preheat oven to 350

In a large bowl, combine cake mix, pumpkin puree, and chocolate chips.

Line sheet pan with foil or parchment paper. Spray lightly with cooking spray or brush lightly with olive oil.

Scoop cookie dough by the tablespoons onto a sheet pan. About 6 cookies to every quarter pan or 12 for a every half sheet. Dot the tops with chocolate candies, optional.

Bake for 10-13 minutes or until lightly browned. Remove from oven and allow to rest on sheet pan for 5 minutes. After 5 minutes, place on a cooling rack.
