*Use whatever blue cheese you love. Depending on it's potency, you may need a little more or a little less than 1 cup.
Any leftover fondue can be revived with just a splash or two of milk. Then mix and reheat and it'll be as good as new!
- 1 (12 oz) can evaporated milk
- 1 cup blue cheese crumbles*
- 1 small shallot, finely diced (or red onion)
- 2 teaspoons butter or light tasting oil
- salt, to taste
- pepper, to taste
- chives, for garnish (optional)
- kettle chips, cubed pretzel rolls, fresh veggies... for serving
Over medium heat, add the butter or oil to a large skillet. Add the diced shallot and cook for about 1 to 2 minutes, or until tender.
Stir in the evaporated milk and bring to a simmer, over medium heat. Stir in the blue cheese crumbles and allow to simmer until the cheese is melted and dip is thickened, about 2 to 3 minutes. Season to taste with salt and pepper.
Turn off heat and pour into a serving bowl. Serve with kettle chips, cubed bread, and fresh veggies!
