Moist and delicious, this Parmesan Honey Pork Roast is easy to make and makes the whole kitchen smell amazing!
This pork roast was a surprise! I knew it was going to be good, I had seen the recipe many times before with great reviews. It took me way too long to make it. The ingredients are simple and are almost always in my kitchen. If you have any leftover meat, slice it thin and put it in a sandwich. I love to make Cuban sandwiches with the leftovers in fact.
I was a little worried about the salt. I love salt and am not afraid to use it but the soy sauce, parmesan, chicken stock, and extra salt had me worried it'd be too much. I shouldn't have been worried because it has the perfect amount of seasoning. I think the 1/2 teaspoon salt should be to taste though, just in case. Taste for saltiness and what's too much or not enough for your family.
*We've never had dry or tough pork with this recipe. It depends on the size and type of the roast you use. I typically use about 2 1/2 to 3 1/2 pound boneless pork loin roast. If you used a pork shoulder, I don't think you can hurt it as the longer it cooks, the more tender it gets. The National Pork Board has recommended to cook pork to a internal temperature of about 145 F to 160 F, followed by a 3 minute resting time. I cook the roast to about 150 F and then remove it from the slow cooker. Then I let it rest, on a plate, tented with foil while I make the gravy. A meat thermometer is a great tool for your kitchen. You may need less time than 5 to 6 hours, carefully check after 4 hours for doneness.
Parmesan Honey Pork Roast

- 1 (3-4 lb) boneless pork roast*
- 2/3 cup shredded parmesan
- 1/2 cup honey
- 1/2 cup chicken stock
- 3 tablespoons soy sauce
- 2 tablespoons olive oil
- 2 tablespoons dried Italian seasoning
- 2 tablespoons chopped garlic
- 2 tablespoons cornstarch
- 1/2 teaspoon fine sea salt, or to taste
In a bowl, combine parmesan, honey, soy sauce, italian seasoning, olive oil, garlic, and salt. Set aside.
Lightly spray a slow cooker, or line with slow cooker liner. Place pork roast in slow cooker and pour parmesan honey mixture over pork. Cook on low for 5 to 6 hours*.

After tender, remove pork from slow cooker and tent with foil to rest. Carefully strain liquid into a saucepan. In a small bowl, combine chicken stock and cornstarch. Whisk cornstarch mixture into the liquid in saucepan. Put over medium heat and cook until thickened, about 2 to 3 minutes, stirring constantly. Pour into a gravy boat or bowl to cool slightly, as the sugar in the honey will burn someone very badly.
