Holiday Mashed Potatoes

The mashed potatoes to rival all, these Holiday Mashed Potatoes are perfect for special holidays!

Not only are these potatoes full of cream cheese and butter, there's heavy cream in there too. These are what I call "special occasion food" only. Sometimes, when I make these, I'll substitute cashew milk or half and half for the cream and almost always use Neufchatel cream cheese instead of full fat. There is no substitute for the butter though. Luckily, this batch feeds a lot of people so no worries!

When seasoning the potatoes, remember there are a lot of potatoes. Start with 1/2 teaspoon fine sea salt and work your way up. I used 2 teaspoons in the end but taste after every small addition to avoid over-salting.

Holiday Mashed Potatoes
serves 10-12
  • 5 lbs potatoes, peeled and cubed
  • 8 oz cream cheese, softened
  • 1 stick butter, softened
  • 1/2 - 3/4 cup heavy whipping cream
  • fine sea salt & black pepper, to taste
In a pot, add cubed potatoes and cover with water. Bring to boil and cook until tender. Drain thoroughly

Mash potatoes using a potato masher until there are no longer lumps. Add in cream cheese and butter. Stir or mash to combine. Stir in heavy cream, starting with 1/2 cup until desired consistency. Season to taste.
