Gooey and refreshing, these Coconut Oil Lemon Blondie Bites are perfectly delicious and easy to make!
These blondie bites are packed with lemon flavor and are complimented perfectly with the subtle coconut flavor of unrefined extra virgin coconut oil. Top with a glaze full of lemon zest and this is a perfect lemony dessert!
Coconut Oil Lemon Blondie Bites
Makes 32 blondie bites
Recipe adapted from Bakeralla
- 1 cup all purpose flour
- 3/4 cup granulated white sugar
- 1/2 cup unrefined coconut oil, melted and cooled
- 2 eggs
- 3 tablespoons lemon juice, freshly squeezed
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- 1/4 teaspoon fine sea salt
- 1/4 teaspoon baking powder
- Lemon Glaze, recipe below
Lemon Glaze
- 1 cup powdered sugar
- about 1 tablespoon lemon juice, freshly squeezed
- 1/2 to 1 teaspoon lemon zest
Preheat oven to 350 F and line 32 mini cupcake cups with mini cupcake liners.
In a small bowl, whisk flour, sugar, baking powder, and salt together. Set aside.
In a large bowl, whisk the coconut oil, lemon zest, lemon juice, vanilla extract, and eggs until combined. Stir in the flour mixture until smooth.
Scoop by the tablespoon into the cupcake liners. Smooth the tops of the batter. Bake about 11 to 13 minutes or until a toothpick comes out clean. Allow to cool about 15 minutes in the pans before removing blondie bites.
Meanwhile, whisk together the glaze ingredients.
After cooled, frost/drizzle with glaze and enjoy!
