Crunchy chickpeas, sweet dark chocolate, chewy raisins, and earthy raw pumpkin seeds is our idea for a sublime hiking trail mix!
Summer is the time for hiking! Never go unprepared and without fuel. This trail mix is the perfect blend of crunch, chew, and sweet. Everything we all want in a snack!
A great, portable snack like this is not only great for hikes, but would also be perfect for a road trip or even a afternoon pick-me-up. You can't go wrong here.
Hikers' {Trail} Mix
- 1 (15 oz) can chickpeas, drained, rinsed, and patted dry
- 1/2 cup raisins
- 1/2 cup dark chocolate chunks (ensure that's it's vegan, if desired)
- 1/2 cup raw pumpkin seeds
- oil mister
- pink salt
Preheat the oven to 375 F
Pour the chickpeas onto a large sheet pan and mist with oil. Sprinkle with salt and shake the pan to coat. Bake for about 35 minutes, shaking the pan halfway, or until browned and crunchy. Allow to cool completely before moving on to next step.
Add the cooled chickpeas to a bowl and add the raisins, chocolate chunks, and pumpkin seeds. Stir to combine and enjoy on a hike!
