Almond Butter Cookies


Three ingredients (just almond butter, coconut sugar, + a egg) are all you need for these easy and fast Almond Butter Cookies.


These cookies are a favorite due to their intense almond butter flavor. Not too sweet, the coconut sugar adds a wonderful caramel-like flavor. Feel free to use regular white or brown sugar if you wish.

These delicious cookies couldn't be easier to make. Customize to your liking using different nut butters, such as sunflower seed, peanut, or even pistachio. Add in chocolate chips, shredded coconut, or even crushed potato chips or pretzels to add crunch and texture. 

Almond Butter Cookies
Makes about 24 cookies
  • 1 cup natural almond butter (preferably with no sugar added)
  • 1/2 cup plus 2 tablespoons coconut sugar
  • 1 egg, whisked
Preheat the oven to 350 F and lightly grease a large baking sheet.

In a bowl, whisk the egg and coconut sugar until smooth. Stir in the almond butter until fully incorporated. 

Scoop, by the tablespoonful, onto the sheet pan about 1" apart. Press the tops with a fork to make a crosshatch pattern. 

Bake for about 10 minutes, or until the edges are browned. Let cool completely on the sheet pan before moving.
