Dijon & Lime Baked Chicken Drumsticks


Fast to prepare and full of flavor, these simple Dijon & Lime Baked Chicken Drumsticks are sure to become a favorite!


Dijon and lime is a uncommon combination, at least for us, but they work flawlessly together. The simple chicken drumsticks are cheap and almost everyone loves them. Brush on the delicious dijon and lime mixture, then all you have to do is bake. Add a salad and dinner is ready!



I think the drumsticks are the perfect chicken for this sauce, but you can use chicken breasts, bone in and skin removed, as well. You'll just need to adjust the time according. (Usually, I cook bone in chicken breasts at 400 F for about 40 to 45 minutes; just be sure to check for doneness.)

  • 8 chicken drumsticks, skin removed
  • 1 lime, juiced & zested
  • 1 garlic clove, minced
  • 3 tablespoons dijon mustard
  • 1 tablespoon mayo (or plain full fat greek yogurt)
  • dried parsley or chives
  • salt 
  • coarse ground pepper
Preheat the oven to 400 F and spray/brush a sheet pan with oil. Pat the drumsticks dry and arrange them on the pan. Sprinkle with salt and set aside. 

In a bowl, whisk together the mayo, dijon, garlic, lime juice, and zest. Brush the chicken with the sauce and sprinkle with parsley or chives and coarse pepper. 

OR

Add the dried chicken to a large bowl. Sprinkle with salt and pour the sauce over the chicken. Toss to coat. Arrange the chicken on the sheet pan and sprinkle with parsley or chives and coarse pepper. 

Bake for 35 to 40 minutes, or until no longer pink. If the chicken doesn't have much color, Broil for 2 to 3 minutes.
