Intensely full of flavor, this Carrot Ginger Salad Dressing is addictively good.
Many of us have had this gorgeous orange colored salad dressing a time or two. It's usually served atop really cold, crisp lettuce. There's really nothing else like it and it's hard to find a good one at the supermarket. This homemade version is just as good and really easy to make!
I love to serve this over a simple salad of crisp romaine, sliced cucumbers, and heirloom cherry tomatoes. It's all about the dressing.
Carrot Ginger Salad Dressing
Adapted from Skinnytaste
- 1/3 cup shredded carrots
 - 1 garlic clove, minced
 - 3 tablespoons light tasting oil
 - 3 tablespoons unseasoned rice vinegar
 - 2 tablespoons water
 - 2 tablespoons grated onion
 - 1 tablespoon tomato paste
 - 2 to 3 teaspoons grated ginger, to taste
 - 2 teaspoons low sodium soy sauce, or to taste
 - 1 teaspoon lime juice
 - 1 teaspoon agave nectar, or to taste
 - salt & pepper, to taste
 
Add all ingredients to a blender and blend until smooth and ingredients are well combined. 
Taste for seasoning and sweetness and adjust if needed.
Pour into a jar and refrigerate until ready to serve.
