Healthy and colorful, this Hippie Kale Salad is a perfect make-ahead meal!
This salad couldn't be more flavorful. The tangy, oil free dressing is only three ingredients, plus salt & pepper. The salad itself is just a bunch of crunchy and colorful veggies and fruit. Add in whatever seeds/nuts/veggies/fruits that you like!
This recipe makes a lot of salad. Keep it in the fridge, well wrapped, for up to 3 days. Have some for lunch or serve with dinner.
Hippie Kale Salad

- 1 bunch lacinato kale, stems removed and thinly sliced
- 1/2 head red cabbage, core removed and thinly sliced
- 3 oranges, peeled and cut into segments (reserve juice)
- 1 yellow bell pepper, seeds removed and thinly sliced
- 1 small red onion, thinly sliced
- 8 strawberries, stems removed and thinly sliced
- 1/2 cup blueberries
- 1/2 cup roasted pistachios
- 1 (14 oz) can chickpeas, drained & rinsed
Dressing
- 1/4 cup reserved orange juice
- 1/4 cup balsamic vinegar
- 2 tablespoons dijon mustard
- salt & pepper to taste
Add all dressing ingredients to a small bowl. Whisk to combine.
