Quick to make, this Bacon Cheeseburger Salad with Dill Pickle Dressing is a low-carb option for lunch or dinner!
It's crazy to think about how much this taste like a cheeseburger! You get all the same flavors without the carbs and messiness of eating a real cheeseburger. Adorn the salad with whatever toppings you'd eat on a burger. Tomatoes, jalapenos, mushrooms...
This salad is perfect for lunch or dinner with the family. If you're making this for kiddos, croutons made out of hamburger buns would be fun and might entice them to eat a salad.
When dressing the salad, hold a little bit of dressing back to avoid overdressing.
Bacon Cheeseburger Salad with Dill Pickle Dressing
serves 2
Inspired by Buns In My Oven
- 10 oz romaine, torn, washed, and dried
- 2 slices bacon, cooked and crumbled
- 2 dill pickle spears, diced
- sliced onion, as desired
- 8 oz ground beef
- 1/2 cup sharp cheddar cheese shavings
- dill pickle dressing
- salt & pepper, to taste
Divide ground beef into two patties and season to taste with salt & pepper. Heat a skillet over medium heat. Add burgers and cook until desired. Drain on paper towels after cooking and dice into small pieces.
In serving bowls, add lettuce, bacon, onion, pickles, cheese, and burger pieces. Toss with dressing, as desired.
Dill Pickle Dressing
- 2 tablespoons mayo
- 2 tablespoons non-fat, plain greek yogurt
- 1 dill pickle spear, finely diced
- 2 teaspoons pickle juice
- 1/2 teaspoon Worcestershire sauce
- 2 tablespoons mustard
- 2 teaspoons ketchup
In a small bowl, combine all ingredients. Serve with salad.
