PB & J Overnight Oats


Breakfast can be hard, especially if you're not a morning person. These PB & J Overnight Oats are the perfect solution for those who want a filling, delicious breakfast, but also want their sleep! 



The secret to overnight oats is equal parts oats, yogurt, and milk. Knowing this, you can do a large batch at once for multiple servings. 


For this recipe, I chose one of my boyfriends favorite flavor combinations: PB & J. Be sure to use a peanut butter that is made with just peanuts and maybe a little salt. There are many options out there, so just quickly check the labels. Another important note is about the jam. Use a jam, either store bought or homemade, that is made with very little sugar. All you really need in your jam is fruit. I used a homemade sugar and pectin free grape jam that uses grated apple for pectin and sweetness. 

PB & J Overnight Oats
Serves 1
  • 1/3 cup old fashioned oats
  • 1/3 cup non-fat plain greek yogurt
  • 1/3 cup unsweetened, original almond or cashew milk
  • 2 tablespoons peanut butter
  • 2 tablespoons jam
  • 1 tablespoon chia seeds
  • 1/2 teaspoon vanilla extract
  • 1/2 to 1 teaspoon stevia granules
  • small pinch salt
In a jar, add all ingredients. I like to add the ingredients in the order listed above, stirring after every addition.

Twist lid on tightly and refrigerate overnight

Optional: For a thinner, more drinkable consistency, stir in a additional 1/3 cup milk in the morning.
