This Christmas Kale Salad {Vegan + Gluten Free} couldn't be more delicious!
Salads, such as this one, couldn't be easier. It's just chopping veggies, blending the dressing, and then tossing it all together. Of course any mixins you like, add them in. I kept it simple with shallots, apple, pecans, and pomegranate seeds. The hummus dressing is so flavorful and creamy, it'd make a delicious dip for all sorts of veggies.
Christmas Kale Salad
- 1 large bunch kale, washed, dried, & thinly sliced/shaved
- 1/2 small shallot, thinly sliced
- 1 apple, cored & diced
- 1/2 cup freshly toasted pecans
- pomegranate seeds, as desired
- creamy hummus dressing, recipe below
Creamy Hummus Dressing
- 1/4 cup plain hummus
- 2 tablespoons freshly squeezed orange juice
- 1 tablespoon maple syrup
- 1 tablespoon coconut aminos
- 1 teaspoon orange zest
- 1 teaspoon spicy brown mustard
- 1/2 teaspoon freshly grated ginger
- 1 small garlic clove (optional)
For the dressing, add all the ingredients to a blender and blend until smooth.
For the salad, add all the ingredients, adding as much dressing as desired, to a bowl and toss to combine. Serve and enjoy!
