Roasted salmon recipes like this one and my Maple Ginger Salmon are great to keep in mind for weeknights. Like most other fish and seafood recipes, they cook up quick and are healthy.
This salmon is sweet and tangy and full of flavor. Just honey and mustard and a little garlic, if you like, are all you need for a delicious glaze for roasted salmon. If you like lemon, a little lemon zest, about 1/4 teaspoon or so, is delicious mixed in with the glaze.
Honey Mustard Salmon
Serves 4
- 4 (4 to 6 oz) center loin salmon filets (thawed if frozen)
- 1 garlic clove, minced (optional)
- 1/4 cup honey
- 3 tablespoons mustard (I used a tablespoon each of yellow, dijon, and coarse ground)
- salt, to taste
- pepper, to taste
- sliced green onions, for serving (optional)
Preheat the oven to 400 F and line a sheet pan with foil or parchment paper.
Add the honey, mustard, and garlic to a small bowl. Stir to combine. Reserve a 1/4 cup for serving in a separate bowl.
Pat the salmon filets dry and season lightly with salt and paper. Arrange the filets on the sheet pan. Brush with glaze and bake for 5 minutes. Brush again and bake another 5 minutes. Then once again, brush again and bake another 5 minutes. Check for doneness and bake another 2 to 3 minutes, if needed. Remove from oven and serve with a tablespoon of reserved glaze. Sprinkle with green onions, if desired and enjoy!
