Simple Roasted Fennel


Unique and perfect with any entree, this Simple Roasted Fennel only needs a couple ingredients!



Fennel is one of those vegetables that go with every dish. The sweet anise flavor compliments chicken, fish, and beef wonderfully. 

This side dish is one of the easiest ever. Fennel, oil, and salt & pepper is all you need for flavorful vegetables. Roasting alone brings out so much flavor. I find that thinner slices of fennel roasted at a high temperature works best for this dish. The flavor sweetens slightly and is more complex from the browning.

Simple Roasted Fennel
Serves 2-4 as a side
  • 2 bulbs fennel, sliced thinly, fronds reserved
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fennel fronts, roughly chopped
  • salt & pepper, to taste
Preheat oven to 400 and line a sheet pan with foil. 

Arrange fennel rings and slices on the pan. Drizzle with olive oil and sprinkle with fronds, salt, and pepper.

Bake 25-30 minutes, or until tender and browned.
