Buffalo Chicken Salad with Gorgonzola Dressing


Spicy and full of flavor, this Buffalo Chicken Salad with Gorgonzola Dressing is perfect for any time of the week!


If you like buffalo chicken wings, you will go crazy for this salad.
There are so many great flavors going on. The spice of the buffalo chicken, sweetness from the carrots, and saltiness of the Gorgonzola dressing create the perfect salad. 

Buffalo Chicken Salad
Serves 2
  • 2 small romaine hearts, washed, dried, and torn
  • 1 raw chicken breast, cut into thin strips
  • 2 large carrots, peeled and cut into matchsticks
  • 1/4-1/3 cup hot sauce, to taste
  • 1/4 cup Gorgonzola Dressing, or as desired
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder 
  • salt & pepper, to taste
  • 1 tablespoon butter
Heat a large skillet over medium-high heat. Add butter and allow to melt until sizzling.

Season chicken slices with garlic powder, onion powder, salt, and pepper. Cook in butter until almost fully cooked, about 5 minutes. Pour in hot sauce and stir to coat. Allow to continue to cook in sauce until fully cooked and sauce has thickened, about 2 minutes. 

In a large salad bowl toss lettuce, carrots, and dressing. Divide into two serving bowls and top with chicken.

Gorgonzola Dressing
  • 1/2 cup Gorgonzola crumbles
  • 1/2 cup light mayo
  • 1/4 cup non-fat, plain greek yogurt
  • 2 tablespoons white vinegar
  • 1 tablespoon milk (almond, cashew, cow...)
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon garlic powder
In a small bowl, whisk mayo, greek yogurt, milk, and vinegar until combined. 

Whisk in spices, sugar, and Gorgonzola crumbles. Pour into a seal-able jar and refrigerate for at least 30 minutes before serving.
