Mediterranean Hummus Wraps {Repost}


Incredibly flavorful, these Mediterranean Hummus Wraps are a perfect lunch!

These simple wraps are hardly a recipe. Whatever you have in your fridge will work just fine. Add as much or as little of each ingredient you'd like.

Mediterranean Hummus Wraps

  • gluten free whole wheat wraps
  • hummus
  • roasted red peppers, sliced
  • sundried tomatoes, sliced
  • marinated artichokes, quartered
  • feta cheese, crumbled
  • capers, drained & rinsed
  • fresh basil leaves
  • spring mix, washed & dried
  • red wine or balsamic vinegar
  • extra virgin olive or grapeseed oil
  • coarse ground pepper
Add the basil and spring mix to a bowl. Lightly drizzle with vinegar and oil. Sprinkle with pepper and toss to coat. Set aside.

Heat the wrap in a dry skillet over medium heat for about 30 seconds per side.

Lay the wrap on the plate. Spread a heaping tablespoon of hummus into a thin layer on the center of the wrap. 

Arrange the red peppers, sundried tomatoes, artichokes, capers, and feta over the hummus. 

Top with the dressed greens and basil. 

Roll the wrap tightly and slice in half. Serve and enjoy!
