Turkey Sandwiches with Blueberry Mayo


Easy and delicious, these Turkey Sandwiches with Blueberry Mayo are unique but familiar.


These sandwiches are a perfect option for lunch. The blueberry mayo is the perfect compliment to a simple turkey sandwich that a lot of us eat for lunch. The blueberry mayo works great with ham or chicken sandwiches as well.

I have made more blueberry sauce than anything else in my life. It's so simple to make. If you have really amazing sweet blueberries than you might even get away with adding no sugar. Go by taste and what you have on hand and you'll have a amazing blueberry sauce. Use it on ice cream, in a blueberry malt, or make some blueberry ice tea. 

I always have lots and lots of Maine blueberries in my freezer which makes it easy to make this blueberry sauce in the winter months. Check your grocery store freezer section for blueberries that were frozen during peak season for the best taste.

Turkey Sandwiches with Blueberry Mayo

Makes 4 sandwiches
  • 8 oz shaved turkey
  • 8 slices whole grain seeded bread, toasted
  • 4 romaine leaves, washed & dried
  • 1 cup frozen blueberries
  • 2 teaspoons sugar, or to taste
  • 1 tablespoon lemon juice, or to taste
  • 1 cup mayo
Heat a small saucepan over medium heat. Add blueberries, lemon juice, and sugar. Cook until berries burst and the mixture has a jam like texture, about 5 to 10 minutes. Cool to room temperature and then refrigerate until cold, about 30 minutes. After cold, mix about 1/4 cup of blueberry mixture with the mayo.

Spread the blueberry mayo on 4 slices of bread. Top with 2 oz turkey and a romaine leaf. Top with top slice of bread and serve.
