Pappardelle with Caramelized Onions & Parmesan


This simple and buttery pasta, with only five ingredients, is way better than you'd ever even imagine. 


When I first saw this recipe, my first reaction was to think of things to add to it. Maybe bacon or prosciutto? Green peas? It just seems too simple. What I thought was going to be it's downfall became the best part about it. Of course, if you do want to add other ingredients to it, this pasta would compliment it perfectly. It is very versatile.

  • 1 (8.8 oz) package pappardelle pasta
  • 2 onions, halved & thinly sliced
  • 2 tablespoons butter
  • 1/2 teaspoon dried thyme
  • 1/2 cup parmesan shavings 
  • salt & pepper
  • pasta water
Add the butter to a large skillet. Melt over medium heat and add the onions. Sprinkle with salt and pepper and cover with a lid. Allow the onions to steam for about 5 minutes. Uncover, and cook for 25 to 30 minutes or until deeply browned, stirring occasionally. 

Bring a pot of salted water up to a boil and cook the pasta according to package directions. Reserve the pasta water. Scoop the cooked pasta out of the water and add to the pan with onions. Toss to combine, adding pasta water as needed to form a sauce. Finally, add the parmesan and salt & pepper, if needed. Serve and enjoy!
